Pesto Pasta
This dish is so fresh and tasty! It reminds me of summer!
This recipe is a nut free pesto, but I think it's even better than traditional pesto. The addition of lemon and a bunch of parmesan makes the most flavorful sauce!
Ingredients:
- 1 large bunch basil (2-3 c.)
- 1 lemon, juice
- 3 garlic cloves, chopped
- 3 oz parmesan cheese (pecorino romano also works great)
- salt & pepper
- 1/3 cup olive oil
- 1- 16 oz box of pasta
Instructions:
- Cook pasta according to package instructions. (reserve 1 c. pasta water)
- Blend the pesto ingredients in a blender or food processor
- Mix pasta with pesto, adding the pasta water as needed
- Plate and garnish with an extra sprinkle of grated cheese
*optional: add some chicken or shrimp for some protein
