Pasta Pomodoro with Italian Sausage
A great weeknight meal! Comes together in 20 minutes and tastes oh so good!
It is so easy to make great tomato sauce from scratch! I added some spinach for some veggies, but you can add whatever you have in your fridge. This is a great week night meal to whip up in 20 minutes after you get home from work!
Ingredients:
- 1 lb pasta (I used dried pappardelle)
- 2 tbsp olive oil
- 1 lb Italian sausage
- 3 cloves garlic
- 1 28 oz can of peeled, whole tomatoes
- 6-10 basil leaves
- 2 handfuls of spinach
- 1 tsp sugar
- Salt and pepper
Instructions:
- Cook the pasta according to the package directions
- Brown the sausage in a pan with olive oil
- Once the sausage is cooked, add the garlic, and cook for 2 mins
- Add the can of tomatoes, sugar, S&P to the sausage and break up the tomatoes with your spoon, cook for 5 mins
- Add the pasta, spinach, and basil and toss for a few minutes, so the sauce coats the pasta
- Serve, and sprinkle with parmesan cheese
