Marinated Grilled Veggies over Couscous
One of my favorites for meal prep!
Ingredients:
- Couscous
- Mozzarella cheese pearls
- Asparagus
- Red onion
- Bell peppers
- Raw pine nuts
- Zucchini
- Fresh basil
- Olive oil
- Balsamic vinegar
- Salt and pepper
- Dried oregano
Instructions:
- Chop veggies, leaving the zucchini a bit larger and cutting the onions a bit smaller so everything cooks evenly
- Add veggies to a mixing bowl and coat with olive oil, salt and pepper
- Grill veggies until nicely charred (if using a grill with open grates, you may want to use a grill basket)
- Toast the couscous in a pot with olive oil before adding water and covering to cook on low heat for 10 min
- For the marinade, combine equal parts olive oil and balsamic with salt, pepper and dried oregano
- Toss the veggies in the marinade - the longer this sits, the better!
- Lightly toast the pine nuts in a dry pan until golden
- Time to plate! start with a bed of couscous, topping with our veggies, mozzarella pearls, pine nuts, and fresh basil
