Lemon Herb Potato Salad
This is a great side for any meal! Pair with baked chicken, burgers, or a bed of lettuce to make a full salad!
Ingredients:
- 1 ½ lbs yellow potatoes, diced
- 8 oz green beans, quartered
- ¼ red onion, chopped
- ¼ red onion, chopped
- 3 handfuls of herbs (dill, parsley, basil, chives, tarragon, etc,)
- 1-2 lemons, zest and juice
- 4 tbsp capers and brine
- Olive oil, salt, and pepper to taste
Instructions:
- Bring a pot of water to a boil.
- Add the green beans and cook for 1-2 minutes.
- Remove the green beans from the pot, leaving the water.
- Add the potatoes, and boil for 10-15 minutes, or until fork tender.
- In a large bowl, add together the onion, lemon, herbs, capers, and olive oil, salt and pepper.
- Mix in the potatoes and green beans.
Taste and adjust seasoning as needed!
