High Protein Spinach and Artichoke Dip
Cottage cheese makes for a filling, high-protein, creamy variation of spinach and artichoke dip!
Ingredients:
- 2 shallots
- Olive oil
- Salt and pepper
- Spinach
- 16 oz cottage cheese
- 3 oz parmesan cheese
- 1 tsp Worcestershire sauce
- 1 tsp brown mustard
- Salt and pepper
- 1 can or quartered artichokes
- Parmesan
- Green onion
Instructions:
- Finely dice 2 shallots
- Sauté shallots in olive oil, salt and pepper until tender
- Add spinach and sauté until wilted
- Blend cottage cheese and parmesan cheese
- Add Worcestershire sauce, brown mustard, pepper, sautéed veggies and quartered artichokes before pulsing blender until combined (leaving large pieces of artichoke)
- Salt and pepper to taste, then pour into a baking dish, top with grated parmesan, and broil until golden
- Top with green onion and serve with crostini or chips
