Fried Sage, Italian Sausage, and Sweet Potato Pasta
So many great smells and sizzles! If you’re looking for a rich, satisfying meal to cook on a chilly day, this one’s definitely it!
Ingredients:
- Olive oil
- Fresh sage leaves
- 1 lb ground mild Italian sausage
- 1 sweet potato
- 3 garlic cloves
- 1/2 red onion
- 1/2 cup chicken broth
- 16 oz of pasta (pick your favorite!)
- 2 handfuls of baby kale
- 1/3 cup heavy cream
- 1/2 cup grated parmesan
Instructions:
- Boil large pot of water for pasta and cook according to package instructions, saving 1 cup of pasta water
- Fry sage in a pan with oil for 3 minutes (or until crispy). Remove sage and place on paper towel to soak up excess oil.
- Fry Italian sausage in oil until cooked through, chopping apart as it cooks.
- Chop sweet potato, garlic cloves, and red onion
- Remove cooked sausage from the pan
- Add sweet potato and onion to the pan and sauté for about 10 minutes, until tender
- Add the garlic and sauté for another 2 minutes
- Deglaze the pan with 1/2 cup chicken broth
- Reduce heat to low, and add sausage back to pan along with drained pasta
- Add in baby kale and 1/2 cup of pasta water. Stir to combine
- Add heavy cream and grated parmesan
- Stir until the cheese melts into the sauce, adding more pasta water as needed to thin
- To serve, top with fried sage and more parmesan
