Cheesy Breakfast Burritos
Best way to start your morning, and great for meal prepping!
These are some of my favorite breakfast burritos to make! They freeze amazingly well. On my day off, I like to make a double batch of these to pop in the freezer. Then, any day that I do not have time to make breakfast (most days), I will grab a burrito and pop it in the microwave for a few minutes. They taste like I had just made them that morning! So good!
Ingredients:
- 1 lb breakfast sausage
- 1 bell pepper, diced
- 1/2 onion, diced
- 1 large potato, diced
- 5 eggs
- 6 tortillas
- 1/2 c shredded cheese + extra for the filling
- 1 T oil + extra for cooking veggies
- 1 T flour
- 1 c milk
- 1 t paprika X 2
- 1/2 t granulated garlic
- salt and pepper
Instructions:
- Preheat oven on broil
- Add sausage to a pan with olive oil and cook half way through (about 4-5 minutes)
- Add the onion, pepper, salt and pepper, and cook through (about 4-5 more minutes)
- Put diced potatoes on a baking sheet with olive oil, 1 tsp paprika, and s&p and broil for 10 mins
- Scramble eggs and cook with s&p and olive oil
- Mix the sausage and veggies, potatoes, and cooked eggs in a bowl, set aside
- For the cheese sauce, make a roux with the flour and 1 tbs oil (add the oil and flour to a pan and cook until bubbling (2-3 mins))
- Slowly add milk, stirring constantly
- Take off the heat
- Add 1 tsp paprika, granulated garlic, s&p, and shredded cheese, stir
- To assemble- add the filling, cheese sauce, and shredded cheese to a tortilla, and roll up
- When you are ready to serve, heat through in the microwave, a frying pan with a little oil, or wrapped in foil in the oven
To freeze, wrap in foil and put in an airtight container. When you are ready to eat it, take it out of the foil and microwave for 90 seconds.
Makes roughly 6 burritos.
