Breakfast Tacos with Green Chili Salsa and Crispy Cheese Tortillas
If you love brunch and tacos, this one is for you!
Ingredients:
- Frozen diced potatoes and peppers
- Olive oil
- Cajun seasoning
- Ground breakfast sausage
- 4 eggs
- Butter
- Cheddar cheese
- Cotija cheese
- Tortillas
Salsa:
- 3 green onions
- 1/2 a bunch of cilantro
- 1/2 a jalapeño
- 4 oz can of green chilies
- 1 lime
- 4 small or 2 large tomatoes
Instructions:
- Season frozen potatoes / peppers with cajun seasoning and olive oil and bake until golden
- Brown the breakfast sausage in a pan over medium heat
- Time to make salsa! Chop green onions, cilantro and jalapeño and combine w/ green chilies, a drizzle of olive oil, salt, pepper, and lime juice. Lastly, dice and add tomatoes.
- Scramble eggs and heat in a skillet with butter until cooked through
- Add cheese to a skillet, then a tortilla. Cook until the cheese is lightly browned
- Time to plate! Add the potatoes first, then eggs, crumbled sausage, salsa, and Cotija cheese
